- Beef mince (5% fat)500 g

- Black beans (drained)240 g
- Small soft tortillas8

- Vegetable oil10 ml
- Ground cumin1 tsp
- Smoked paprika1 tsp
- Dried oregano1 tsp

Method
- Fry the onion in the oil for 4 minutes, then add the mince and cook for 7–8 minutes, breaking it up, until browned.
- Stir in the garlic, cumin, paprika and oregano for a minute.
- Add the chopped tomatoes and beans and simmer uncovered for 10–12 minutes, until thick enough to hold in a tortilla.
- Meanwhile, chop the lettuce, cucumber and tomatoes and mix them for the salad.
- Warm the tortillas to the packet instructions.
- Fill the tortillas with the beef and cheese, and serve the salad alongside.
Tip: A thick filling makes these much easier for children to eat, so only add water if the pan starts to stick.
