- Beef mince (5% fat)500 g
- Spaghetti300 g
- Chopped tomatoes400 g
- Parmesan40 g
- Lettuce1
- Tomatoes4

- Olive oil1 tbsp
- Tomato purée1 tbsp
- Beef stock cube1
- Balsamic dressing4 tbsp

Method
- Cook the spaghetti to packet instructions, then drain.
- Meanwhile, heat the olive oil in a large frying pan over a high heat.
- Add the mince, break it up with a spatula and fry for 5 minutes until browned.
- Stir in the chopped tomatoes and tomato purée, then crumble in the stock cube.
- Swill the tin out with the water, add it to the pan and bring to the boil.
- Turn down to medium and simmer for 10 minutes.
- Divide the spaghetti between the plates and spoon the sauce over.
- Grate the parmesan on top, or pass it round at the table.
- Toss the lettuce, tomatoes and cucumber with the balsamic dressing and serve alongside.
Tip: The sauce freezes well on its own, so make a double batch and bank a second dinner.
