- Pork mince (5% fat)400 g
- Long grain rice200 g
- Bacon medallions4
- Red onion1
- Red pepper½
- Green pepper½

- Water (boiling)125 ml
- Cajun seasoning1 tbsp
- Chicken stock cube1
- Worcestershire sauce1 tsp
- Bay leaf1
- Low-calorie cooking spraya few sprays

Method
- Cook the rice to the packet instructions with the bay leaf in the water, then set aside.
- Dissolve the stock cube in the boiling water.
- Spray a large frying pan and cook the onion, pork mince and bacon until nicely browned.
- Stir in the Cajun seasoning and Worcestershire sauce and cook for a minute.
- Add the celery and stock and cook for another minute.
- Stir in the peppers and spring onions for a minute or two, until just softening.
- Stir the cooked rice through until it is all a deep golden colour.
- Remove the bay leaf and serve.
Tip: Cook the rice the day before if you can. Cold rice fries drier and takes on more colour.
